Autumn’s Chicken Salad
Ingredients:
2 cups cooked shredded chicken breasts
½ cup diced celery
¼ cup diced red onion
½ cup chopped apple ( I used fuji)
¼ cup dried cranberries
½ cup chopped pecans
½ cup red grapes cut in half (optional)
1 Tbsp leafy celery tops chopped
Sauce:
2/3 cup mayonnaise
3 tsp apple cider vinegar
1 tsp sugar
¼ tsp onion powder
¼ tsp garlic powder
salt and pepper to taste
Instructions:
1. In a small bowl combine the mayonnaise, apple cider vinegar, sugar, onion powder, garlic powder and salt and pepper and whisk together.
2. In a large bowl combine the shredded chicken, celery, red onion, apple, cranberries, pecans, grapes and celery tops.
3. Pour sauce over the chicken mixture and stir until combined.
You can eat this right away but I think it’s best if you let it sit in the fridge for a couple hours prior to serving.
Can be served on sliced apples, as a sandwich or a wrap. Or you can just use a big spoon and dig right in!
